Thandai is a super scrumptious Indian drink made from beautiful cooling spices such as fennel, cardamom and saffron.
This is a drink associated for so many to the festival of Holi and the start of the warmer weather. Like so many other classic flavours this too will transport you to the hustle and bustle of the streets of Indian draped in a rainbow of vibrant colours.

Ingredients
Thandai Powder:
30g Almonds
15g Hazelnuts (or traditionally Pistachio)
15g Fennel Seeds
10g Cardamom Powder
4g Black Peppercorn
15g Melon Seeds (opt)
100g Granulated Sugar
500ml Milk (of choice)
1 Tbsp Rose Water
Pinch of Saffron
Pinch of Rose Petals
Method
- Weigh out all the ingredients for the Thandai powder.
- Grind up the nuts and then the remaining spices and sugar.
- Mix both together.
- Place milk in a pan over medium heat.
- Add in two to three tbsp of the Thandai powder.
- Add in the rose water, saffron and rose petals.
- Stir well and bring the milk to boil.
- You can serve this warm or let the milk cool down and serve in a tall glass with a couple of ice cubes.
