Tandoori Broccoli Bites

This is a vegan and gluten free snack, friendly for the toddlers just as much as the grown ups.

The humble broccoli marinated in a tandoori spiced yoghurt mixture and baked for a crispy coated nugget.

This came about with me trying to use up ingredients left in the fridge but turned out to be a great go to snack as it takes no time to make.

Ingredients

2 Medium Carrots

1 Small Broccoli

4 Tbsp Yoghurt

1 Tsp Coriander/Cumin Powder

½ Tsp Turmeric Powder

½ Tsp Red Chilli Powder

½ Inch Ginger

1 Tsp Paprika

1 Tsp Himalayan Salt

40g Falhari Flour

1 Tbsp Oil

Method

  1. Chop up the Broccoli into small pieces and boil until cooked through.
  2. Grate the carrots and keep aside.
  3. Drain and let it cool down.
  4. Mean while preheat the oven at 180C and line a baking tray.
  5. Mix the remaining ingredients (except the oil) to make the marinade, reduce or omit the red chilli powder for the toddlers.
  6. Mix in the carrots and broccoli and let it marinade for 10 mins.
  7. Make small nugget like shapes and place onto the baking tray.
  8. Brush a little oil onto the tops.
  9. Bake for 15 mins and turn over.
  10. Brush with oil and bake again for another 5-10 mins.
