Sweetcorn Relish

Sweetcorn relish is a bright and tangy condiment, versatile to go with so many dishes.

I love adding this to hotdogs, burgers and even add it to my quesadillas for that extra burst of flavours.

It’s a very simple one pot recipe with minimal prep work that just can’t go wrong.

Ingredients

2 Corn on the Cobs

2 Celery Sticks

1 Large Red Chilli (opt)

95ml Apple Cider Vinegar

1/4 Tsp Mustard Powder

60ml Maple Syurp

Method

  1. Cut off the corn kernels from the cob (pierce the top with a fork or knife and cut downwards, taking off the kernels).
  2. Place all the ingredients in a pan over medium heat until the kernels are cooked through.
  3. Let it cool and pour into a jar, store in the fridge.
