Sweet Potato, Moong and Quinoa Patties

A great alternative to the traditional burger, and packed with so much more nutrition especially for the little ones.

Moong and quinoa are both such great sources of protein and plenty of vitamins and minerals. Not forgetting the sweet potato, that not only provides such a beautiful flavour but an excellent source of fibre and antioxidants.

Serves

Make 8 Patties

Ingredients

1 Medium Sweet Potato

100g Whole Moong Lentils

30g Quinoa

500ml + 350ml Water

2 Green Chillies

1 Tbsp Coconut Oil

¼ Tsp Asafoetida Powder

1 Tsp Ginger Paste

12 Basil Leaves

½ Tsp Turmeric Powder

½ Tsp Cumin Powder

¼ Tsp Nutmeg Powder

1 Tsp Lemon Juice

1 Tbsp Sesame Seeds (opt)

Method

  1. Boil and peel the sweet potato.
  2. At the same wash the quinoa and place to on a medium heat with 350ml of water and cook until quinoa is fluffy and soft and the water has been cooked off.
  3. In a separate pan wash and boil the moong lentils in 500ml of water. (All three can be cooked at the same time).
  4. Mix and loosely mash together.
  5. Finely chop the green chillies and the basil leaves.
  6. In a pan heat the oil and sauté the ginger and chillies.
  7. Add in the asafoetida and remaining spices.
  8. Mix in the sweet potato mixture and cook for 5 mins.
  9. Preheat the oven at 180C and line a baking tray.
  10. Split the mixture into 8 and gentle pat into shape on the baking tray, top with sesame seeds.
  11. Make all 8 and place in the oven for 20 mins.

Serve up as you would with your favourite burger additions.
