Do you ever have left over chapati’s? Well if you’re from an Indian household then usually the go to next day is a quick sautéed chapati cooked in yoghurt, which is super yummy.
However, I really wanted to find a way to use the left over chapatis in a differently, so I decided to substitute the rice or noodles that we’d usually have with a stir fry with shredded and crispy chapatis.
Stir Fry’s are a great go to meal when you’re short on time and don’t want to spend hours in the kitchen, so this made perfect sense to combine.

Ingredients
4-5 Chapati’s
1 Tbsp Oil
1/4 Tsp Asafoetida Powder
1/8 Tsp Turmeric Powder
1/4 Tsp Red Chilli Powder
1/4 Tsp Himalayan Salt
1 Medium Carrot
1/4 Small White Cabbage
8 Baby Corns
50g Tenderstem Broccoli
60g Mangetout
1 Red Pepper
1 Tbsp Sesame Seed Oil
1 Red Chilli (opt)
1 Inch Ginger Piece
1 Tsp Dark Soy Sauce
1 Tsp Stir Fry Sauce
1 Tsp Vinegar
1 Tsp Salt

Method
- To shred the chapatis I used a pizza cutter to swipe up and down cutting the chapati into very thin shreds.
- Mean while heat up the wok and once hot add in the oil.
- Add in the asafoetida, turmeric, red chilli powder, salt and mix.
- Add in the shredded chapati’s and mix.
- Start to stir as it begins to crisp up to ensure it doesn’t burn.
- Once the chapati is all crispy take out and spread onto a wide plate (this is will allow it to cool without trapping any moisture so it doesn’t turn soggy).
- Prepare the vegetables: shred the cabbage, cut the mangetout and baby corn in half and chop the rest into thin one inch pieces.
- Finely dice the ginger and red chilli.
- Heat up the same wok and once hot add in the sesame seed oil.
- Add in the ginger and chilli and cook until the ginger starts to brown.
- Add in all the vegetables except the red pepper.
- Stir fry the vegetables for 5 mins.
- Add in the soy sauce, stir fry sauce, vinegar and salt.
- Add in the red peppers and cook further for another 5 mins as the vegetables are tender and cooked.
- Add in the shredded chapatis just before serving to ensure is they stay crispy.
