Satay Stir-Fry

A sweet, nutty and salty satay based stir fry, perfect for a quick fix dinner with a burst of very satisfying flavours.

Simply chop up the vegetables, boil the noodles and in the quick to make satay sauce.

Ingredients

200g Baby Sweetcorn
150g Mangetout
200g Tenderstem Broccoli
1 Stick Celery
1 Large Carrot
2 Tbsp Sesame Seed Oil
1 Tbsp Sesame Seeds
250g Noodles
1 Inch Ginger

Method

  1. Chop the veggies to desired size. I prefer the celery and carrots chopped to thin inch long pieces, the broccoli into smaller florets and half the baby sweetcorn and mangetout and dice the ginger.
  2. Put a wok onto a high flame. Add the sesame seed oil to the hot pan and lower the flame.
  3. Add the ginger and after 30 seconds add the rest of the veggies and stir fry for about 5-7 mins.
  4. Separately boil the noodles.
  5. Drain the noodles, mix in the stir fry and the satay sauce.
  6. Roast the sesame seed lightly and top off the sir fry. You can also sprinkle some chilli flakes on top too.
