Sambharo

Now I know I can’t be the only one who just loves this on toast? Come on guys, show some love if you do.  (We can jazz it up and call it an Indian bruschetta if you’d like).

Sambharo is a traditionally a side salad as part of a Gujarati thali. I’ve always loved this and every single time wanted more.

The freshness of the cabbage and carrots stir fried in a simple sauté of Indian spices is just goodness overload in my opinion!

Ingredients

1 Small Cabbage
4 Large Carrots
1 ½ Tbsp Coconut Oil
1 Tsp Mustard Seeds
4-5 Curry Leaves
2 Green Chillies
½ Tsp Turmeric Powder
1 Tsp Sugar/Agave Syrup
1 Tsp Himalayan Salt
1 Tbsp Lemon Juice

Method

1. Heat the oil over a medium flame.
2. Add in mustard seeds and when they start to pop add in curry leaves and chopped green chillies.
3. Finely chop the cabbage and carrots.
4. Add to the pan with the remaining ingredients and stir fry for 8 mins until cooked but still have a crunch to it.
