Sambal Sauce

Sambal sauce is such a great burst of spicy and sweet flavours.

My friends used to make this so much in university and I can still taste it.

I decided to make it myself for the first time and it was delicious. This makes for a great addition to stirfry, marinated tofu and even add it in to your pizza sauce, yes pizza sauce its great for the chilli freaks out there!

You can even take a few teaspoons of the sauce add it into some hot oil and its the perfect chilli oil for any meal.

Sambal Sauce

Ingredients

50g Dried Red Chillies

2 Celery Sticks (70g)

1 Tsp Asafoetida Powder

15g Ginger

2 Kaffir Lime Leaves

130ml Oil

2 Tbsp Oil

4 Sugar (or sweetener of choice)

1 Tsp Himalayan Salt

Method

  1. Wash and drain the red chillies, discard any seeds that fall out.
  2. Soak on warm water for 30 mins and then drain the water.
  3. Blend together, red chillies, celery, asafoetida, ginger, kaffir lime leaves and 130ml oil.
  4. Heat up a pan and add in 2 tbsp oil.
  5. Once the oil is hot, add in the chilli mixture.
  6. Mix in the sugar and salt and cook until the colour turns to a deep red colour like below.
