Roasted Carrot Hummus

Well isn’t this just sunshine in a bowl!

We love us some hummus in our family and I’m always trying add a little extra love to the classics.

So this is my hummus with twist.

Ingredients

300g Carrots
1 Tin Chickpeas
3 Tbsp Olive Oil
1 Tsp Cumin Powder
½ Tsp Himalayan Salt
1 Tbsp Lemon Juice
3 Tsp Tahini
½ Tsp Asafoetida Powder

Method

  1. Preheat the oven at 200C.
  2. Peel the carrots and coat in olive oil.
  3. Roast for 20 mins and set aside to cool.
  4. Drain the chickpeas.
  5. Add to a food processor with all ingredients including the cooled carrots. (Add a little extra oil if you thick).
  6. Serve up topped with roasted pine nuts (optional).
