Raspberry Chia Jam

✨4 ingredients and only 10 mins to make.✨

We went to Parkside farm and had such a beautiful morning picking our own fruit and vegetables.

They had the sweetest berries as well as my personal favourite, raspberries.

I went a little over board and picked too many to eat, so whipped up a great jam.

Perfect with almost anything but we enjoyed them with mini scones.

You can substitute your fruit of choice into this recipe.

I only used 1 Tbsp of agave syrup as the raspberries were very sweet but you can judge for yourselves as to how sweet you want it.

You can use any sweetener, sugar, coconut sugar, maple syrup, agave syrup or leave it as it is.

350g (Average Jam Jar)

Ingredients

250g Fresh Raspberries
2- 4 Tbsp Agave Syrup (sub with sugar or maple syrup)
1 Tsp Lemon Juice
1 Tsp Chai Seeds

The raspberries I had were very sweet so didn’t need much added sweetness, add more if you think it’s needed.

Method

1. Wash the fruit and place into a pan over medium heat.
2. Add in the sweetener.
3. As the juices start to release to can start to loosely mash up the fruit. And keep on the heat until it starts to boil.
4. Lower the flame and add in the lemon juice and chia seeds. Mix well and cook for a further 3-4 mins.  the mixture will start to thicken. (Will go to a more jam like consistency as it cools later).
5. Take off the heat and let it cool down. Then place in the fridge for 30-60mins.
