Raisin Scones

Jam first or cream first?

My daughter Aadhya and I had planned to make these yummy scrummy Scones for both her Grandma’s for Mother’s Day.

Unfortunately with the current situation of Covid, like many, we had to stay home and postpone our celebrations.

So we decided to bake anyway and celebrate our gorgeous Queens from afar.

These are soft, melt in your mouth with extra hits of sweetness with raisins mixed in.

This recipe is so easy, quick and of course tasty.

Ingredients

350g Self Raising Flour

1/4 Tsp Salt

55g Caster Sugar or Coconut Sugar

1 Tsp Baking Powder

85g Vegan Butter

175ml Warm Oat Milk (can be any)

1 Tsp Vanilla Extract

Squeeze of Lemon

60g  Raisins

Method

  1. Preheat the oven to 200 C, and place baking tray inside.
  2. Mix all the dry ingredients.
  3. Cut up the butter into cubes and combine with the dry mix until it resembles a crumbly texture.
  4. Mix in Raisins, Vanilla Extract and Lemon.
  5. Add the Oat Milk and combine until a dough is formed.
  6. Dust with flour a clean surface and roll out the dough to 3cm in thickness.
  7. Take the baking tray out of the oven.
  8. Cut out scones and place them onto the hot tray.
  9. Bake in the oven for 10 mins until light brown.
  10. Serve up warm with Jam and Clotted Cream.
