Quinoa Crispies

Anyone who knows me knows I have a sweet tooth.

However only recently I’ve been trying to get myself back on track and get fit and I needed to substitute my sugar intake with something sweet but in keeping with my new routine and food journey.

This is also a great snack for the little ones too. Using Quinoa gives a good boost of energy and raw Cacao is actually a superfood with tons health benefits, one of which is a natural mood elevator. So give this recipe a try and get your happy buzz on!!

Ingredients

  1. 3 Cups Puffed/Popped Quinoa (Or Puffed Rice)
  2. 3 Tbsp Coconut Oil
  3. 1/2 Cup Raw Cacao Powder
  4. 1/2 Cup Maple Syrup
  5. 1 Tbsp Tahini
  6. 1 Tsp Cinnamon (optional)
  7. Pinch of Sea Salt

Method

  1. Dry roast the Quinoa for 4-5 mins and set aside to cool. This prevents the puff going chewy when the sauce is mixed in.
  2. Mix all ingredients except the puffed Quinoa in a small pan and stir until the sauce thickens.
  3. Take the sauce off the heat and cool for 5 mins.
  4. Mix the sauce with the Quinoa puffs.
  5. Place a baking sheet in a tray and pour the crispie mixture in. Gently spread the mixture out and pat down to level it.
  6. Place in the fridge for an hour until its firmed up.
  7. Cut into squares and serve up!
