Quinoa and Bulgur Wheat Warm Salad

Light and fluffy quinoa and bulgur wheat combo, mixed with warm vegetables in a spiced sauté.

If you are trying Veganuary, this is a great recipe to have on hand.

There some dishes that make you feel so good. Not only do they make you feel healthy but even better, when they don’t leave you feeling lethargic. This is exactly that.

After the much festive period of indulging in anything and everything, it felt good to whip up a quick and light meal to get back on track to normality.

Ingredients

65g Quinoa & Bulgur Wheat Mix*

280ml Water

2 Small Sweet Potato

1 Celery Stick

1 Red Pepper

1 Small Carrot

1 Tbsp Coconut Oil

¼ Tsp Asafoetida Powder

½ Tsp Cumin/Coriander Powder

¼ Tsp Turmeric Powder

1 Tsp Paprika Powder

½ Tsp Crushed Chillies

1 Tsp Himalayan Salt

½ Tsp Dried Mixed Herbs

Sprinkle of Chopped Coriander

Method

  1. Wash and place the quinoa and bulgar wheat mix with water over a medium heat until cooked. The mixture should feel soft when pressed between your finger and the water should have evaporated.
  2. Meanwhile, peel and chop the sweet potato and carrot into small bite size cubes.
  3. Prepare the rest of the vegetables too, chop the celery and peppers and any other vegetables you’d like to add.
  4. Heat the coconut oil over a medium flame in a separate pan.
  5. When the oil is hot, add in the asafoetida.
  6. Add in the celery and sauce for 2 mins.
  7. Add in sweet potato and carrots.
  8. Mix in the turmeric, paprika, cumin, dried herbs, crushed chillies and salt and cook for 10 mins.
  9. Add in the peppers last and cook for a further 5 mins or until the sweet potato is cooked through.
  10. Mix in the quinoa mix.
  11. Sprinkle with chopped fresh coriander.
