Pina Colada Panna Cotta

Some weekends are just one of those that makes you crave fresh fruity flavours and if like Pina Coladas then this dessert is for you! (The toddlers will enjoy it too).

Ingredients

Panna Cotta:

1 Cup Coconut Milk
2 Tbsp Maple Syrup
¼ Tsp Vanilla Extract
½ Tsp Agar Agar Powder

Purée:

150g Pineapple
1 Tbsp Maple Syrup (Optional)

Method

  1. Mix all the ingredients (vanilla is optional if you don’t want a strong coconut flavour) in a pan over low to medium heat and bring to boil.
  2. Simmer for a few minutes stirring constantly.
  3. Pour into your dessert ramekin or glasses and let it set for 2hrs. May take less.

Purée:

  1. Pulse the pineapple, you don’t want it to be completely smooth. Texture is good.
  2. If the pineapple is sour you can add a little maple syrup to it.
  3. Scoop evenly onto the Panna cotta and set aside in the fridge until ready to serve.
