Pani Puri

Who else enjoyed street food this weekend or any day for that matter?

This for me and my family is street food at its finest. Growing up and still to this day my family and I are pani puri fanatics!!!!

My brother and I used to compete at “who could eat more?”

I was having major pani puri withdrawals so decided it’s time to make ‘em if I can’t buy ‘em!

(I usually buy a pack of puris ready to eat and use a ready made mix I get from India for the water and I’ve tried to replicate it as much as I can… play around with the ingredients to get the taste you want).

For the puri’s themselves I followed the recipe from veg recipes of india and they did all puff so no complaints. I’m going to try the puris again as I think my dough dried up a little in the process.

For the date and tamarind chutney – it’s the same recipe as that in the tikki chole recipe.

You can also make a few variations with this to create other chaats such and bhel, or dhehi puri.

Ingredients

Filling:

2 Medium Potatoes
1 Tin Chickpeas or Black Chickpeas (Kala chana)
½ Tsp Himalayan Salt
½ Tsp Red Chilli Powder

Water:

1 Tsp Tamarind
2 Tbsp Dried Mint Leaves
1½  Tbsp Himalayan Salt
2 Tbsp Dried Mango Powder
3 Tbsp Black Salt
½ Tsp Agave Syrup
½ Tsp Lemon Juice
2 Tsp Roasted Cumin Seeds
2 Tsp Jal Jeera Powder

Method

Filling:

  1. Boil the potatoes, peel and lightly mash.
  2. Add in drained chickpeas (or kalachana).
  3. Mix in salt and red chilli powder.

Water:

  1. Blend up all the dry ingredients.
  2. Take 2 tsp of the mix and add the tamarind paste.
  3. Add in 3 cups boiled water, mix well and let it cool.

Plate up:

  1. Pierce a whole into the puris and fill with the potato filling.
  2. Add in a dollop of chutney (if you like the sweet addition).
  3. And dunk into the water
  4. Get it into your mouth ASAP!!! (DO NOT BITE!!)
