Masala Idli

We love South Indian cuisine in our family, and we always end up making way too much.

This is a great revamp to the classic and makes for a great dish the next day.

Ingredients

8 Idlis medium size.

1 tbsp oil

1 celery stick finely chopped

1/2 green pepper finely chopped

2 fresh green chillis

1/4 tsp asafoetida

1 tsp cumin seeds

1/2 inch ginger finely chopped

1 tomato chopped

1/2 tsp turmeric

1/2 tsp Pav bhaji masala (optional)

Splash of lemon

Chopped coriander leaves

Method

  1. Cut up each Idli into 4 or 6 pieces. Cost with a little olive oil and grill until light brown and crispy (or you could shallow fry them in a pan).
  2. In a pan heat the oil, and then add cumin, ginger, fresh chillis, asafoetida
  3. Finely chop celery, peppers and tomato and add to the pan. Cook for 5 mins on medium or until tomato is soft.
  4. Add the rest of the spices, stir until aroma changes.
  5. Add the idli stir gently add lemon let it cook for a further 3-4 mins.
  6. And finally sprinkle with chopped coriander.
