Maple Glazed Roasted Veg

A boom of colour, crispy edges and flavours that truly have you wanting more.

A simple side dish but so filling and oh so tasty. Given it a twist with a touch of sweetness.

Ingredients

2 Sweet Potatoes (420g)
1/4  Swede (300g)
5 Rainbow Carrots (250g)
2 Beetroot
3-4 Tbsp Maple Syrup
3  Olive Oil
1 Tbsp Lemon Juice
1 Sprig Rosemary
1 Tsp Dried Sage
1 Tsp Himalayan Salt
¼ Tsp Ground Nutmeg
¼ Tsp Ground Cinnamon
½ Tsp Paprika Powder

Method

1. Preheat the oven 200°C and line a large baking tray with greaseproof paper.
2. Prep the veg, peel the skin and chop up into 1 inch pieces.
3. Mix all the remaining ingredients for the coating.
4. Coat the veg and place onto the tray and bake for 40 mins.
