Lime and Chilli Crispy Potatoes

Chilli and lemon crisps are my all time favourite flavour so here for a great side to any meal I’ve replicated the zesty and spicy flavour combination to super crispy on the outside and fluffy on the inside roasted potatoes.

A great crunch and crisp to every bite with bursts of deliciousness.

Ingredients

750g Baby Potatoes

3 Tbsp Coconut Oil

½ Inch Diced Ginger

½ Tsp Nutmeg Powder

1 Tsp Chilli Flakes

1 Tsp Himalayan Salt

1 Tbsp Chopped Coriander

½ Lime

Method

  1. Cut the potatoes into quarters and par boil, drain the water.
  2. Place the oil in a cooking tray and place in the oven at 200C for 10-15 mins or until hot.
  3. Add in the potatoes to the oil and mix in the ginger, chillies, salt and nutmeg.
  4. Mix well and place back in the oven for 20 mins or until golden and crispy.
  5. Whilst in the pan, add the limes juice from half a lime and mix.
  6. Sprinkle over with chopped fresh coriander.
