Honeycomb

A homemade honeycomb, or simply put a pure sugar rush!!

I love this as it only needs three ingredients to make.

Dip it in a chocolate of your choice and make your own crunchie bar at home.

For me personally, I love to use it as decoration piece for cakes, they make great asymmetric shard visuals.

Ingredients

150g Caster Sugar

75ml Golden Syrup (or 4 Tbsp)

2 Tsp Bicaronate Soda

Oil For Greasing

Method

Honestly this couldn’t be simpler.

  1. Firstly, take your tray and line it with greaseproof paper.
  2. Spray or brush with oil, this will ensure the honeycomb doesn’t stick to the paper.
  3. Have your bicarbonate soda measured and ready on the side.
  4. Mix together the sugar and golden syrup in a pan over low heat, occasionally stir to help melt the sugar, the sugar must be completely dissolved (if you think the mixture is close to burning then add in a little water to prevent this).
  5. Once melted increase the flame to a medium heat and allow the mixture to bubble.
  6. Once the mixture starts to bubble, take off the heat and have your whisk ready.
  7. Add in the bicarbonate soda.
  8. Whisk well, the mixture will aerate and double in size, pour this into the lined tray.
  9. Place in the fridge for 2 hours to cool.
  10. Break into shards, dip in chocolate of your choice it you’d like or enjoy as it is.
