Dudhi and Makai (Bottle Gourd and Sweetcorn Curry)

Another simple yet satisfying Sabji.

I love this combination and it goes down well with my daughter too and I’m so pleased about it.

Dudhi or Lauki otherwise known as Bottle Gourd is rich in so many essential nutrients. It’s a great source for calcium and vitamin C and K as well as much more.

So go grab some the next time you go shopping and try it out, this is a home cooked simple Indian curry.

Ingredients

1 Dudhi/Lauki/Bottle Gourd
200g  Sweet corn
1 ½ Tsp Coconut Oil
½ Tsp Cumin Seeds
½ Tsp Mustard Seeds
¼ Tsp Asafoetida Powder
1 Inch Ginger
1 Green Chilli
½ Tsp Turmeric Powder
1 Tsp Himalayan Salt
½ Tsp Red Chilli Powder
1 ½ Tsp Cumin & Coriander Powder
1 Tbsp + ¼ Cup Water

Method

1. Chop of the top and tail and peel the dudhi. Cut into small pieces roughly an inch in size. (If using frozen sweet corn soak in hot water to soften up).
2. Heat the oil over a medium flame.
3. Add in mustard seeds, cumin seeds and asafoetida.
4. Once the mustard seeds start to pop add in ginger and finely chopped chillies.
5. Add in chopped dudhi with turmeric and salt. Mix and in a Tbsp of water. Cover with the lid and cook for 7 mins.
6. Mix in sweetcorn and remaining ingredients and cook for a further 10-15 mins until the dudhi is tender but not mushy.

Serve with soft Chapatis.
