With Easter soon approaching, my daughter and I had some fun in the kitchen baking this tasty and kid friendly treat.
We love cakes and as we were talking about the easter bunny we decided to make him a little treat for when he arrives.
Here is our bite size portions of our moist and flavourful carrot cake with a silky cream cheese frosting.
Can’t wait till easter weekend to enjoy these mini cakes in the sun, after a good fun Easter egg hunt for my little girl.

Ingredients
110g Vegan Butter
180g Coconut Sugar (or Light Brown Sugar)
1 Flaxseed Egg (1 Tbsp Ground Flaxseed + 2 Tbsp Water)
1 Tsp Vanilla Extract
1 Tsp Ground Cinnamon
1/2 Tsp Baking Powder
1/4 Tsp Himalayan Salt
120g Plain Flour (or flour of choice)
130g Grated Carrot (1 Large Carrot)
Frosting:
115g Vegan Cream Cheese
45g Coconut Sugar (or Light Brown Sugar)
1/2 Tsp Vanilla Extract
Method
- Make the flaxseed egg, grind the flaxseed to a fine texture, mix with 2 tbsp of water and place in the fridge for 20 mins.
- Preheat the oven at 180C and line an 8×8 baking tray with greaseproof paper.
- Melt the butter.
- Pour into a mixing bowl and mix well with the sugar until well combined (Pic Top Left).*
- Once the flaxseed is ready add this to the butter and sugar mixture.
- Add in the vanilla extract, cinnamon, salt and baking powder and whisk well.
- Sift in the flour and mix well.
- Cut of top and tail of 1 large carrot and peel off the outer layer.
- Grate the carrot roughly about 130g and mix this into the batter (Pic Top Right).
- Pour the mixture into the baking tray and place in the oven for 30 mins.
- Remove from the oven and allow the cake to cool (Pic Bottom Left).
- Meanwhile mix together all ingredients for the frosting until it looks silky and smooth (Pic Bottom Right).
- Once the cake is cool pour the frosting over the top and spread out as evenly as possible.
- Place in the fridge to set for 30 mins.
- Cut into 16 even pieces, first cut halfway vertically and then horizontally. Then cut each quadrant into fours.
- Top off with any fun decorations of your choice.
