BBQ Spread – Spiced Tofu Skewers

The weather is changing back to sunny days and you know that means bbq’s are coming back out. Those smokey charcoal infused flavours will be hitting our senses for sure. ⁣

This week I’ll share my favourite vegan (duh!) bbq recipes and by the weekend you can try out this mouth watering combo for yourself. ⁣

Above you’ll see, grilled stuffed mini peppers, crispy satay tofu, grilled sweet potato with a grilled pineapple salsa and spiced tofu skewers (and of course grilled corn on the cob, but you know that one). ⁣

Ingredients

200g Firm Tofu

150g Yoghurt

1 Large Red Pepper

100g Baby Sweetcorn

1/2 Tsp Himalayan Salt

1/2 Inch Ginger

1 Tsp Cumin/Coriander Powder

1/4 Tsp Turmeric Powder

1/2 Tsp Red Chilli Powder (or paprika for less heat)

1 Tbsp Gram Flour

1/2 Tsp Asafoetida Powder

1/2 Tsp Chaat Masala

1/2 Tsp Garam Masala

1/2 Tsp Carom Powder

1 Tsp Lemon Juice

1 Tbsp Olive Oil

Method

1. Prepare the tofu by draining it and cutting into smaller cubes or triangles. (I like to have smaller pieces as the main flavour is in the marinade so each piece is bite size. The perfect ratio of tofu to marinade).⁣
2. Take a fork and make small indents into the tofu. This will allow the marinade to seep into the tofu. Chop the peppers into similar size as well as the baby corn. ⁣
3. For the marinade mix well all ingredients. ⁣
4. Mix in the tofu and vegetables and set aside for 30 mins. ⁣
5. Assemble onto the skewers and place onto the bbq. Turn them regularly to avoid over cooking. The colour of the marinade should be browning and be grilled well. ⁣
