Here is another amazing, super quick snack. These cookies are soft, crumbly and oh so tasty.
The flavour combination of apples, cinnamon and oats will give you all the feels of a warm autumn apple crumble.
For that extra hit of sweetness drizzle a little icing over the top.

Ingredients
170g Wholemeal/ Plain Flour
120g Rolled Oats
2 Tsp Ground Cinnamon
1 Tsp Baking Powder
1/4 Tsp Himalayan Salt
110g Vegan Butter
140g Caster Sugar/Coconut Sugar
1 Tsp Vanilla Extract
160g Gala Apples (approx 2 apples)
1 Tbsp Lemon Juice
Flax Egg:
1 Tbsp Ground Flaxseeds
3 Tbsp Water
Icing:
2 Tsp Icing Sugar
1 Tsp Water
Method
1. Preheat the oven at 180°C and line a baking tray.
2. Mix together ground flaxseed (if you have milled, give it a blitz) and water and let it congeal in the fridge for 10 mins.
3. Peel and grate or finely chop the apple and mix with the lemon juice.
4. Cream together butter, sugar and vanilla.
5. Mix in the flaxseed egg.
6. Mix together the flour, oats, cinnamon, baking powder and salt.
7. Combine flour mixture to the butter.
8. Add in the apples and mix together.
9. Scoop 2 tbsp amounts of the mixture and lightly flatten.
10. Bake for 15 to 20 mins.
11. Meanwhile mix the icing sugar with a little water until you have a pouring consistency.
12. Drizzle over the cookies once cooled.
