1. Peel and chop the apples removing the core.
2. Over a medium flame place the apple, cinnamon, cardamom, saffron and lemon juice. Mix well.
3. The apple will start to release its juices and soften up. To speed this up you can gently mash them, keeping in mind you want the texture to still contain bites of apples not a purƩe form. Set aside once you have the required consistency.
4. In a lined baking tray lay out oats, and mix in the maple syrup. On one side place the almonds. (You can omit the maple syrup if you wish but I liked the little clusters you get once baked).
5. Bake at 180C for 15-20 mins until the oats start to turn a brown colour. You can mix the oats 10 mins through the bake.
6. Let it cool.
7. Blend the almonds into a powder and mix into the apple mixture along with 3/4 of the oats.
8. You should have a thick enough texture to roll the apple mixture into roughly 10 balls.
9. Roll them into the oats to get a rough coating.
10. Set aside in the fridge for 15 mins to set.
Serve up as it is or drizzle some maple syrup and rose over it.
